They're alive & confined with humans when that happens.
As mentioned it is not the actual eating of the fully cooked meat but the poor cleaning and handling of the carcass and meat and how the animals are stored live. Pigs are dirty animals who roll around in their own filth but we do not have regular outbreas of viruses and really rare trichonosis. That is because the industry is regulated to be clean in how the animals are handled and killed and processed (lets not get into the run off of their waste). In Wuhan and other parts like that the animals that carry these diseases are not kept in sanitary conditions and when you see butchers in open markets with trash around and insects and mixing of raw meats it is not surprising that something can happen. It is not common because it takes a major jump from animals to human with an intermediary but the conditions I have read about it China make the probability much much higher and we do not need to help corona virus strains to mutate or jump.
Yes. As I have said several times before "their entire livestock management practices are a breeding ground for diseases." Not just swine but also - and especially poultry- whereby they generate a new bird flu every month it seems although most don't end out transmitting to humans but some do. In addition their use and abuse of antibiotics turbocharges all the problems in all foodstock animals.
