What bread are you eating these days?

  3. I buy this Italian bread at Aldi‘s. It is very good and affordable. The scanner I am using is called Yuka it is free, and also very useful.

    I rarely eat bread or confectionery.

    I replaced it with my homemade
    yogurt and natto bean.
    Both are probiotic foods.

    I make my own sourdough. After tons of research trying to duplicate a local bread, I came up with this formula. It's as good if not better than what I was trying to copy.

    800g BF
    150g WW
    50g Rye
    50g Spelt
    autolyse for 2 hrs
    add 200g ripe levain (feed 1:3:3 night before)
    add 21g salt
    Bulk ferment at 76-80 for 4-6 hrs (you got to watch it, biggest thing is under-fermenting)
    Shape and retard in frig overnight
    Bake in Dutch Oven 20 min at 500 (I add 3-4 ice cubes)
    remove lid bake 20 min at 450

    Honestly, best bread I've ever had.

    LOL that actually a good brand;
    don't know if its ''enriched'' bread = CR*P+ turns to sugar in bodies, but worse\ since seldom has much fiber in it ...................................
    I like whole grains even in my sweets usually..............................................
