Fruit is easy. Rinse and eat. Buy frozen vegetables and microwave them. Fast food. A good salad takes a bit more time unless you buy prepared. But even if you make it from scratch, you can make a few meals worth at a time.
Also, consider canned beans in water with no added salt. I read that it is more nutritious than home-cooked because it is cooked very quickly and immediately canned. Supposedly, this method retains more nutrients than homemade. I don’t know if it’s true, but since I buy canned, I’ll go with the theory. I’m partial to dark red kidney beans and work a can into my meals everyday.
I try to buy beans without salt all the time. We consume more salt than necessary, it's in everything. It's interesting that the salt free products are more expensive than the ones with salt. You think they would be cheaper, or at least the same price. I never heard that they were more nutritious, but I can believe it, if they are cooked quick. I normally eat kidney beans when I cook chili, but not in many more places. Thanks
