This new GPU, Radeon HD 4750 might be considered a better alternative to GTS 250 for a multimonitor set-up. One can drive 2 high res monitors of it. 500 watts power supply sounds light to me for building a good system that can run 8 monitors. There are many online calculators available to see how much power you need.
Depends upon the video cards. If workstation cards are used, they could command as little as 60-80 watts for 8 monitors. If gamer cards are used, perhaps up to 600(?) watts?... that's 600 watts for the video cards alone.
