Kangaroo is delicious, but a very lean meat, have to be careful. Nice coat of olive oil , cooked quite rare works well. Never been to "Outback steakhouse " myself, but recently found a local butcher who sells crocodile, possum, Roo, wallaby , Camel, Goat, Emu, rabbit, venison, squab, duck, geese, and the list goes on. I'd be in culinary heaven, if it weren't for the fact it all averages about $40 per kilo. Crocodile bits? $60 per kilo. Not even the steak, that's just "bits". Not certain I'd try the Possum at any price, but I hear they're ok.
Highly recommend it if you ever get the chance, especially for someone interested in military-type strategy etc. I played for the first time a few weeks ago and fell in love with it. Good workout, and fun as hell blastin' your friends with paintballs.
