Just grab yourself a commercial image generator array or a rack system and put it in an IT closet. I would say eliminating the stack of monitors would actually make it easier to eat lunch. You have more desk space. The HMD certainly does not block your mouth. The aspect I enjoy is that you get a single cable up to 100 feet long from the HMD to your IT closet. -Raystonn
