It's pretty important to rinse vegetables or fruit with water, and vegetables preferably with hot water. I heard stories about somebody who contracted a fungus from eating a carrot straight from the land. Took it out, ate it without washing, and contracted a fungus for at least 10 years that just wouldn't go away.
