Dest welcome back to Keto haha.... My staples for breakfast are 2 eggs in coconut oil. No cheese first stage. Drink at least 24 oz of water. Water really fills me up in the morning. Lunch has been a small protein (6 to 8 oz) and 2 large cups of veggies and 24 oz of water. My veggies of choice to start out are: Broccoli, Cauliflower, Brussels Sprouts, Cabbage in coconut or olive oil and salted. Also butter. Dinner is same. These veggies give me the best fullness for the buck and fiber to go with the protein and 24 oz. of water. Also the gas is amazing for late night fun. For snack my best options were snacks bought from Bariatric food websites. Protein, some fats but little to no sugars and under 200 calories. After a while I grew to love them. ordered them by the case. Of course my goal was 1200 to 1300 calories, slightly more on lifting days and you are a bigger guy so you know better but the above got me to my calorie level and kept me under 40 net carbs. The main thing was getting the 64+ ounces of water and 4 cups of those cruciferous veggies for bulk. Killed my sweet tooth with my son's sugary shit snacks all around the house. I had a bunch of bread and an amazing dessert at my favorite Argentinian steakhouse last Sunday. Shit was awesome but the gas and bloating was not. I think you have to do that every 2 months... Anyway, I am not worried about you doing it as you been down this road but BariatricFoodDirect has all the snacks that fit Keto (not all of them are Keto but most) and got me off of chips and chocolates. Will PM you my favorite snacks they had there.
I am using salted nuts (no one you know) for snack but they can easily be overeaten and a lot of them cause some discomfort due to the fat content. I just found out pork rinds are keto so trying a bag for small snacking. I am not a salt whore rather than sweet tooth. I doubt large amounts of this are healthy but a few here and there might satisfy cravings. Pure fat and protein and no carbs...
Kale chips! (lots of phytonutrients if you believe in that sort of thing. I tend to think that your liver just detoxifies them out and then you are good to go for a steak). Don't knock it until you try it. I love them....satisfying crunch and salty/spicy as you wish. Cut central stiff stems off...use hands to mix after dousing with OO or coconut oil.... then season as you like using hands to mix in salt (1t), garlic powder(1T), smoked paprika(1T) etc. Baking sheet covered with foil....300 oven....nice & slow to avoid burning them. Check after 20minutes...bake until crispy.
