I'd wait, because the creamer which is sitting at a lower base temperature once added to the coffee will draw heat out of the coffee to attain the same base temperature as the coffee surrounding it, thereby dropping the collective temperature. I don't know thermodynamics, just using logic.

You can save 99 prisoners. If they use a point scheme where each color is a different value. Red is 0, blue is 1 and green is 2. The first prisoner should walk up there and add up the point value for the remaining 99 hats. He should divide he number by 3 and find the remainder. Shout the color that corresponds to the remainder. The first prisoner may die. The next prisoner should add up the values of the hats that he sees and subtract this from the number the orginal prisoner shouted and the previous prisoner. Now he has the number that corresponds to his color. Repeat.
