I think the tell is look at how fast they lose their size after a movie role. If you work years to get in shape you are not going to suddenly lose it all in a few months, again the body will try to maintain what you have. Look at stars like Edward Norton, Matt Damon, even Bale. If they were naturally like they were in their films, they would not suddenly become small and scrawny by the time they are walking the red carpet to premiere the very film they just made in which they were 30 lbs heavier.
