You might want to check about peaches and plums. You may need a dormant season...Frost and a certain amount of hours below 40 degrees are needed for overwintering. My family grew peaches commercially...Years ago. I also spent about a year in Saipan farming. We use to feed the old banana stocks to the pigs...
The bamboo will come back. You have to remove the rhizomes, which can be as deep as 3'. Guy near me did it. They had to remove about a foot or two of topsoil.
Surprisingly, I haven't seen a single rat or snake up in the bamboo cluster. I thought for sure I would find a nest of some type but nothing has been found so far. The only resident in my backyard is an armadillo... we call him Armando. He has dug a burrow at the base of a huge plumbago bush, and despite my french bulldog barking and aggravating the hell of him, he doesn't seem like he's intending to leave anytime soon.
