In theory, I'd like to make commentary videos wth my real time charts on the monitor and talk into a microphone , then save it as a movie format and burn it on a CD-R. Sorta like letting people watch me day trade without probing eyes in my back. Any idea what software or hardware I'd need ?

Try Microsoft Media Encoder 7?, only M$ video format WMV available though. Download it at www.microsoft.com/mediaplayer Better have a fast machine to do this kind of work.
