    How did they measure the speed of completing?

    I'm guessing that once you finish the puzzle, the QR code takes you to a website and that is your proof of finishing. Without the completed puzzle, it won't produce an exact QR code with the exact link.

    Would that not make the puzzle a gigantic QR code?

    I'm guessing that is what the puzzle is based on the pictures. And therefore extremely difficult to do.
