charting the implied volatility of a particular contract

    In optiontrader within TWS right click in the column headings and choose implied volatility.

    New Window -> Options Analysis ->Options Analytics(grouping) . You will find several options related chart features.

    Charting spreads via the regular charting facility will be tricky as certain scaling controls don't work properly.
