The most recent STABLE version (10.19.1f) of TWS is buggy as hell -- pretty much unusable for me -- but as best I can tell there's no way to ROLL BACK to the prior Stable version of TWS. I do still have an installer file for a recent version (10.12.2s), so I completely uninstalled the new/buggy verison, BUT the launcher for the 'old' version auto-updates to the unusable newer one. Is there any way to prevent it from doing that?

Download the offline version, it will not auto-update. You should never really use the auto-updating version if reliability is a priority. https://www.interactivebrokers.com/en/index.php?f=15875
I keep meticulous backups for myself, but was thinking about creating a public repo of the installations on github for the community. More than anything though, I'm surprised IB doesn't do this themselves.
Right, except that the current "Offline" version has been updated to the buggy most-recent Stable version...so good note for next time, but doesn't help right now...
Well, the "tough love" answer is you should have been making backups. OTOH... there's probably some common good to knowing exactly what "bugs" you've found. Maybe you can isolate the bug(s), create clear/reproducible test cases and petition IB to fix them. If you have a few hundred million in your account I'm pretty sure they'll listen. But at the end of the day I wouldn't worry about it... the Fed will eventually print more money and solve the problem.
My latest update also messed things up for me, all the fx quote matrix symbols are gone, restored to a previous layout which did not help and in the end had to re-populate all symbols manually.. ;-(
