He is kind of hard to understand at times because of the audio. He also has a few books out. Mainstream dieticians and nutritionists do not exactly go along with his ideas but who cares about them anyway?
These guys that demonize one particular thing like gluten, dairy, soy, etc. are all a little eccentric to me, and this guy is no exception. Ok, maybe there is a correlation between gluten allergies amongst children that live in New Zealand, but can you really say the same thing about children or adults that live in Italy whose ancestors have been consuming pasta and bread for centuries? Probably not.
Dr. Rodney Ford talks about this in his video: A Protein In The Gut May Explain Why Some Can't Stomach Gluten : The Salt : NPR
I will and can continue to post hundreds of research articles, ect about how horrible gluten actually is if anyone wants me to. I've been studying it for over 20 years. I can post one every day!
I did the comprehensive food sensitivity test from Everlywell, and according to the results, I'm not sensitive to gluten at all.
I have also been tested and do not have gluten sensitivity. I understand why someone who has such a sensitivity or allergy would avoid it. What I don't understand is why someone would avoid it because someone else is sensitive to it. Hey, Batman, some people are allergic to certain kinds of nuts. Does that mean you don't eat any either? (Assuming you do not have any such allergy.)
Exactly. I have a sensitivity to eggs but I'm not out writing books and doing TED talks telling everyone how evil eggs are.
There is the matter of looking at the body of evidence put forward by experts in the field and the medical community. Dr. Ford talks about the anti-gliadin antibody test. However, as was explained to me by someone in the mainstream community, this test is not specific for diagnosis. Here are a couple of papers that clarify the situation: https://pubmed.ncbi.nlm.nih.gov/27845509/ https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6182669/ My source said that non-celiac gluten sensitivity can only be confirmed by eliminating gluten from the diet. The claim that everyone suffers from this has no scientific basis. Consensus among researchers is that it is in the neighborhood of 5-10%.
