Will be in the area this month for a night. Might stay in Atlantic City or points south to Cape May
    Not really a gambler...

We enjoy walking and seeing things different.
    Open to entertainment
Love great food, especially non chain
Budget not an issue, quality most important.

    Any suggestions where to stay/eat/sightsee?

    Thanks.

You are staying one night? If you stay in the Diamond Beach Wildwood Crest you will have beautiful selections to choose from the hotels. Atlantic City is north of the Diamond Beach for you go to the shows if you like that, and the Cape May is south of the Diamond Beach to visit too. Sometimes Cape May will have the horse and carriage ride to take the tour.
To eat, if you will have the car, than L'aragusta Restaurant is very good on the Brigantine island. The Brigantine island is only about 10 minutes going north from the Atlantic city.
Another place to eat for very casual, very small place is the Bandanas in the Wildwood Crest. The food is very fresh, the price is very good too. This is family owned. From Bandanas you can walk to the boardwalk to see the ocean. The season is winter so the stores not really too many open on the boardwalk, but is very nice to walk for the ocean.

Jersey shore resort towns tend to be ghost towns this time of the year. Many of the businesses are seasonal so beware of a limited selection. Your best best (pun intended) is AC...always open and some good restaurants in the hotels. No one is going to put a gun to your head and force you to gamble, contrary to what you may have inferred from that Sopranos box DVD collection. And its close enough to hit some local areas if interested.
